Local Wild Food Challenge

Verduno, Sunday May 22nd 2016: a culinary competition in which contestants have to cook a dish using wild ingredients… from herbs to game, from fungi to insects, that is all!

Founded in 2008 The Local Wild Food Challenge is A Culinary Adventure Competition. Local Wild Food Challenges are designed to showcase the resourcefulness of local people living in communities where wild food is available.

From one small contest in Eastbourne, NZ we now have 8 challenges in 5 countries across the world. On sunday May 22nd in Verduno there will be the only Italian edition, that we hope will become a tradition in Verduno community and could bring more and more participants from all around the world!

The contest will not be the only event of the day. Below there is a summary of the program:

h 10:00 >> Registration of competitors

h 11:00 >> Wild market of local producers (all day)

Workshop (15€ – reservation recommended):

  • h 11.00/12.30 > Funky wines: lecture and tasting of natural wines with Federico Almondo
  • h 11.00/12.30 > Mother yeast: interactive workshop where participants literally put your hands dirty, you will learn the mother yeast production techniques and its uses in the kitchen
  • h 11.00/12.30 > Collection of wild herbs with the students of the University of Gastronomic Sciences
  • h 13.00/14.30 > Children’s Workshop: in the kitchen of Verduno Castle children will taste and cookvegetables and safely wild fruit, healthy and fun.

h 13:00 > Wild lunch (40€, included wines reservation recommended):

Starters

  • Valerian salad, Robiola goat, black truffle, spring onion, egg and radishes, dandelion flowers and bellis perennis
  • Fry with field greens and herbs

First course

  • Green risotto with nettles and mint, field flowers
Second course
  • Marinated trout with wild asparagine and courgette omelette with their leaves and flowers

Dessert

  • Sabayon and crunchy salted hazelnuts
  • Strawberries in syrup of wild roses

Wine (Producers’ association “Verduno è Uno”)

  • Maderé – Cider of Madernassa pears
  • Bianco di Verduno DOC
  • Barbera d’Alba DOC
  • Verduno Pelaverga DOC
  • Langhe Nebbiolo DOC
