The undisputed protagonist of Langhe gastronomy is the White Truffle of Alba (Tuber magnatum Pico). The White Truffle of Alba is one of the most prized products in the world and a symbol of Langhe’s gastronomic excellence. The truffle grows spontaneously near the roots of trees like oaks, lindens, and poplars, and its harvest is carried out thanks to the skill of “trifolao” and their trained dogs.
Harvested in the woods of the region between October and January, its intense aroma and unique flavor make it an exclusive ingredient for refined dishes.
Every year, the International White Truffle Fair of Alba attracts enthusiasts from around the world, offering sensory experiences, showcookings, and auctions dedicated to this excellence. Among the dishes in which it best expresses itself are tajarin with butter, fried eggs, and risotto.
